Needless to say, my husband thinks Valentine’s Day is stupid. And lucky for him, I do too. We’ve resolved to observe it by giving simple, non-rose flowers (him) and cooking something fun (me). The only thing he loves more than pizza is lobster, so I decided to combine the two and came up with an easy and super delicious lobster pizza. It’s fast, simple, and sounds impressive.
Here’s what you’ll need:
Pre-made pizza crust (Boboli will do just fine)
2 or 3 garlic cloves
2 tablespoons of butter
1 can of diced tomatoes
Basil
1 package of Italian blend shredded cheese
Lobster tail
Oregano (optional)
Lemon juice (optional)
Here’s what to do:
-Chop or mince the garlic cloves. Put it in a bowl with the butter, and throw int he microwave for about 1 minute, or until melted. Spread this mixture over the entire circumference of the pizza crust.
-Drain the diced tomatoes and spread evely over the crust.
-Chop the basil leaves and spread over the tomatoes.
-Boil the lobster tail for about 15 minutes, then de-shell it and cut into small pieces. Spread evely over the basil.
-Sprinkle the cheese over the lobster. You can sprinkle some oregano on top of that if you are feeling fancy.
-Bake on top rack for about 10 minutes. Squeeze some lemon juice over the whole pizza, and you’re done!
